The currency used depends only on the buyer's location, not the seller's. Only buyers in New Zealand will see the price in New Zealand dollars. AFAIK buyers in these 36 countries will see the price in their local currency, and those in other countries will see it in US dollars.

I am not a publisher and so haven't seen how it works from the seller's point of view, but I am guessing that the seller has the option to set the price in one currency and have Kobo automatically convert it to the buyer's currency, or else to set a price for each country or region in the local currency.

From the buyer's view, If you want to see the price of a book in other countries you can just change the country code in the book's url.
