The authors need to be sorted consistently in Calibre, which doesn't appear to be the case here according to the inconsistencies you report. I find that the quickest way for me is:
1. Using Calibre to download the metadata for the book: it usually sets the Author tab to 'Name Surname' and 'N1S1 & N2S2' in case of multiple authors.
2. In the metadata settings page for the book, click on the arrow next to the Author tab to correctly set the Author Sorting tab next to it. In the case of single authors, it will be automatically set to 'Surname, Name': for multiple authors, you'll need to substitute the ampersand with a comma in the Author tab before clicking on the arrow, after which it will be correctly set to 'N1S1, N2S2'. There might be exceptions to this of course (eg. authors with double surnames) which you will have to sort manually, but they should be very few.

It's a very quick procedure if you remember to do it every time you add a new book to your library. For those books which have already been sent to the device, after you edit the metadata it will need to be updated (it's done automatically every time you connect it to Calibre).
