I don't think you can hide the built-in columns, There are some tweaks to control editing of custom columns, but I'm not aware of anything for built-in columns.

I had the same issue when I started using calibre, in my most active libraries I don't use Series, Rating, ID's and Date, I make my own covers, and I don't use download metadata.

I've 'solved' it by doing all my editing in the book list. I use the View Manager plugin to control which columns I can see and the order in which they're presented. And I much prefer editing within a table than editing fill-in-the-blanks forms.
