Actually they don't (have a glass surface, that is). The outer screen of the overwhelming majority of eInk devices is made from a clear plastic (polycarbonate, or something similar), not glass. A small number, such as the Kindle Voyage and Oasis, do have a toughened glass outer screen, but they're in the minority.
