If you don't already you need to create a column for the read status (read:true, or read date). Or even decide that if a rating is set mean you read the book.
Then in Preferences > Look & Feel > Column Coloring > Add Rule
Example:
Set (All Columns) to Color; if the (Rating) is greater than 0
or
Set (All Columns) to Color; if the (read_date) is set
etc..
