You need to set two things:
- In the driver configuration, there is an option setting the series info. You need to set this in whichever of the KoboTouch or KoboTouchExtended drivers you use.
- On the "Sending books to devices" page of the preferences, set "Metadata Management" to automatic.

With these options, the series info will be updated whenever you connect to calibre. If you send a new book to the device, it isn't set until after the device has processed the book into its internal database. You need to connect again to set the series info for new books.
