The original Nook Tab that the OP has had a 1024 X 600 pixel screen which is the same resolution as the current $50 Fire (sometimes $40) and Nook tablets. The old Nook Tab & Nook Color did seem to have a higher quality to their screens than the current low end Fire & Nook though.
Two tablets in the $100 range I can think of that the OP might want to look at (I think BestBuy carries them both if you have one near by) are the Samsung Galaxy Tab E Lite and the Asus ZenPad C. Both are 7" tablets and right around $100. Chances of finding something that will fit the cover custom designed for the Nook are slim though (although you might find a cover for a new device with a similar snap in holder instead of bands)

Eesh. Reading on a screen with that resolution would be unbearable for me.
OP, have you considered a nicer Kindle tablet? I think the 8.9 inch one had a decent resolution.
Or, you could see about getting a used Nook HD tablet. I think they're roughly the dimensions you want, they should be under $100 on eBay, and the screen resolution is good. They're discontinued so there's the usual risk you take with used tablets though. But I don't think you're going to find a new one that's a good buy for that money.
