THANK YOU for this advice (even though I know it was pretty much just echoing the advice given in the original post).

Tried everything from dragging and dropping my .mobi files onto my Kindle Voyage to using calibre to transfer them, nothing was showing the covers.

Removed the publishing date from a book and tried again, without making any other changes, and sure enough the cover is now there.
