I always need to have a writing tool, even if I don't write much. I detest Pages as it currently is, I find that the Writepad I paid for years ago has been updated and I have to pay again (but am not really that interested in handwriting anymore), and Writeroom which I loved, is no longer available and even if it was, would probably not work.

Check out Byword. It meets all five of your preferences. If you want to write in Markdown, it can help you do that. It gives you several font choices, font sizing, and the ability to publish to WordPress (if you're into blogging). The writing screen is pretty minimalistic - just a blank page! Some formatting tools are built in to the keyboard. It isn't too expensive, either.
Some folks swear by Ulysses - which is fine if you want to write only in Markdown - and it's a bit more expensive.
