Really? No way to center text under an image? Looking further just now, I found this... and this guy was wanting to do exactly what I want. This won't work either?

EDIT: Looks like Paul Salvette has found a solution, at least for the Kindle. I am really shocked that code for ebooks is not universal... though it would probably be (mostly) if not for Amazon choosing to have a proprietary format.
