I have made a simple change that will track the date of last change to the ol_wait_weeks custom column in another custom column named ol_wait_weeks_date. This isn't quite correct in that it will not show the date that availability was last determined if ol_wait_weeks is unchanged from the previous check, but it was much easier for me to implement it that way.

The Overdrive Link plugin is not the appropriate place for that feature and I will not be adding it.
There is a separate Overdrive metadata source plugin included in calibre, but I don't think that plugin has worked for a while. It used to be able to obtain covers from OverDrive.
Personally, I use B&N and Amazon as my primary sources of covers.
