If you use Kindle Unlimited or Underground apps, they track pages read / app usage to determine payment to the author / developer. That's why you can't use Underground apps if you turn off app usage data collection (settings > Apps & Games). I imagine the same data is tracked for non-KU / Underground content, it just isn't used for the same purpose.

Silk browser requests go through Amazon EC2 proxy servers by default. You can turn this off by opening Silk, entering settings > advanced > cloud features.

They are no doubt also collecting loads of data in aggregate.
