I wouldn't use the grayscale option myself, primarily because I don't use calibre to manage my ebooks. (Convert and edit, yes. Update metadata, sure. But I maintain my own library, in a software-independent fashion.)

As for hoarding, there are a few books that I keep on my reader, but most of them only stay there for as long as it takes me to read them. Once I finish a book, I delete it from there; I can always copy it back over for a reread.
