I do not see this option. Now I know I've seen this option before, when I updated the device to my current version. I can not find it now. Can someone help me out?

sounds like a case for the Mfg Tool to me (see
post #174). Apparently, you could even switch the rom blob contained in the zip to 1.8.1 so you'd get the latest version right away without further updating. Keep in mind that this corresponds to a factory reset, so all user data & settings will be wiped. (Proceed at your own risk, Hrafn has already bricked his device following my advice...!
