Actually, it does not work. It depends on the website you visit and some do not respect Do Not Track requests.
I just found this while looking for a way to sign out of my Google account on my tablet using Chrome. I have the Google site as my homepage. I would sign out, but when I went back to the Google site I was still signed in. Apparently I was tricked into signing into Chrome at some point. I had sync turned off, so there was no reason to keep me signed in except to gather data. Once I went into settings and signed out of Chrome I could sign out of my Google account on the website. I rarely use Chrome on my devices so they didn't get a lot of info on the websites I visited.
