Actually I have some issue doing this: writing with Note doesn't work properly when the vnc server is running and I have to use some other handwriting app like Write or Xodo. They are not optimized for Boox Max, but they do the job.
I don't think you can directly connect Max to a projector.

That is really cool. I didn't think the max would be strong enough. (BTW: is the output greyscale or color?)
I think the reason that note and probably also Neo don't work is that the max has a special mode for scribbles where the screen doesn't change, only ink is added, and I bet that mode does not get the ink to the android system and vnc.
Another option could be to use an overhead projector. Something like the Elmo MO-1 Visual Presenter. I guess it depends what the purpose is.
