Strictly, you should do a factory reset and do the setup afterwards via the PC and Kobo desktop application. The you replace the downloaded firmware package with the version you want to use. You can without the factory reset by following the instructions for manually installing firmware. Whether it works depends on exactly how much things have changed.
But, as you are using WiFi to get books and otherwise sync to the Kobo server, you won't be able to not update.
