It varies with the reading device/app and often the book.
The baseline is Old Kindles and apps get Mobi7, newer ones get KF8 or KFX. But some books are Topaz, some are enhanced typography, some are fixed format, etc. They simply deliver the "best" version your device can handle.

The Kindle paradigm is that you don't buy a specific format: you buy the book license and the Kindle system makes sure you can read it on whatever device you have. You're not supposed to worry your pretty little head over the plumbing.

It's their version of multiformat.

The cue to look for is explicit DRM-free notices, number of simultaneous devices, and enhanced typography. Enhanced typography plus a fixed number of simultaneous reading devices means you *might* get KFX depending on your reading tool. It's all black boxed to simplify "user experience". Lowest common denominator stuff.
