Of course, if you're doing hands on in a store, there likely will be no option except for whatever format demonstration books are currently loaded on the device.

Honestly, there's probably too much worry about the page turning speed. When I've seen comparison between a Kindle Paperwhite and various Kobo models, the page turn speed has been about the same/too close to call.

On both my Nook STWG and my Kobo Aura, there might be a delay when initially opening a large book, but the page turn speed has been negligible. Less than the time it takes me to move my eyes back to the top of the page, as davidfor mentioned.
