The only problem is, this solution requires Calibre to be running at all times and that is not ideal for me.

the only way you will get this to work is if you use the option to embed the updated cover/metadata in the eBook file (i.e. Changing it). It works when you use the Connect button in Calibre as that change is made as part of the transfer.
