Well, *as I stated*, I tried turning the headers & footers back on and off, and nothing helped.
I got this fixed though. A redditor helped me -- first, if you turn the headers/footers back on, then you have to actually close the book by going back to the home screen and then reopen it for the change to take effect.
But, better than that, the guy helped me install a patch that got it working even with the headers/footers off, which is what I really wanted.
