I have found some interesting and useful health apps for Watch which are pretty good. Heart Watch and cardiogram (I need to keep an eye on tachycardia) and Sleep++ as I mentioned, and Sleep Watch (which is auto, but not very accurate, though you can edit... again, the time seems to take precedence over quality. I need to email them). Cardiogram seems to take your pulse often... and you can set it to constant recording if you want. Battery eating there.
WatchOS3 has solved many battery issues for me, and now, depending on apps in use, I can get about 24 hours from one charge. And since I put the thing on charge during the time i am vegging out in front of the TV, or just reading, the short battery life has become irrelevant to me.
IOS 10.1 is fine on my 5S now, 10 was awful which is why I downgraded at the time. That said, I mostly use the 6S for day to day things.

My Garmin vivosmart HR and its iPhone app and web Connect app give fairly good information on sleep too. It records heart rate and movement and then calculates when and how much light sleep and deep sleep I get in a night, as well as awake time too, and it charts it out really well in an easy to read and comprehend format. I just went in for my annual physical this past Thursday and I showed a few pages of reports to my doctor including:
- Resting Heart Rate average for past four weeks
- Average Heart Rate for past four weeks
- Sleep Time patterns for past four weeks
- Typical Night Sleep chart
- Bad Night Sleep chart
- Good Night Sleep chart
He found the reports very useful and was able to discuss some strategies for improvements. You can see some of the report examples attached. But like you, I just don't find the iOS Health app to be useful for actual health monitoring, at least not for a Baby Boomer.
