I'm in pretty much the same boat, Jack. Except I'm closer to 70 than 60. But, the things that Apple calls "health" are generally not. I've pretty much abandoned the use of the health app as such. At best, it shows summaries. As far as sleep is concerned, its of little relevance to me to know I slept (for example) 5 hours. I want to know (and so does my doc) what the quality of that sleep was, and the health app does not record that information. Sleep cycle on the iphone does, as do a few other apps as well. On a fitbit, there is good information about quality and quantity and on Apple watch, well, the sleep apps are not that brilliant, but its early days.

I have found some interesting and useful health apps for Watch which are pretty good. Heart Watch and cardiogram (I need to keep an eye on tachycardia) and Sleep++ as I mentioned, and Sleep Watch (which is auto, but not very accurate, though you can edit... again, the time seems to take precedence over quality. I need to email them). Cardiogram seems to take your pulse often... and you can set it to constant recording if you want. Battery eating there.

WatchOS3 has solved many battery issues for me, and now, depending on apps in use, I can get about 24 hours from one charge. And since I put the thing on charge during the time i am vegging out in front of the TV, or just reading, the short battery life has become irrelevant to me.

IOS 10.1 is fine on my 5S now, 10 was awful which is why I downgraded at the time. That said, I mostly use the 6S for day to day things.
