FBReader on the iLiad does allow you to select the font used to view a Mobi book. What I'm not sure about is whether or not one can install additional fonts. Perhaps someone else knows?
If not, your best answer would be to create a PDF file with the Greek font embedded in the document, rather than a Mobi book.
