Just look at the map.
The ground is at the bottom - from Cornwall in the west across to Kent in the east. The pig is facing west - Wales is the head, and East Anglia is its rump.
The old lady sits on the pig, also facing west - very wrinkled face , with a hat on top.
Obvious, I thought!
