Calibre Companion mostly replicates metadata from Calibre.
CC is not sensitive to the format because it is not a Viewer. (You need an App that supports the format to read)
Usually AZW3 is preferred over Mobi because of formatting options.
Adding or Deleting content (other than Jacket, Cover) is the job of an editor, not conversion.
