There I have two folders "jacket" and "jacket_cook"...

Calibre stores preferences Per (OS) User,

Create another User on your PC with the cookbook Library (and preferences). Share the folder so Copy To Library works...
BUT
Be careful not to have both 'users' accessing the Cook Library at the same time.
