There isn't really a way. Or at least, no good way.
The stats are stored in the database on the device. There are stats stored for each book. For each book you read, the hours read are stored, but they are stored in a way that I have not deciphered. You can reset the stats by deleting all the rows in the database table. Or delete the rows for a book to reset its stats. You can do this easily with a little SQL and an SQLite management to to run the queries.
How sure are you that the 41 hours is wrong? Whenever I have looked at it, the reading hours for any book seems to be about right. They are probably a little high, as I don't know how it counts the end time if the device goes to sleep due to the time. I have this set to 15 minutes, so there might be 15 minutes each time it automatically goes to sleep included when I am not actually reading. But, I hope it doesn't include all of that time.
