You're correct; only one device can stream at a time for the Echo, Prime, and Individual plans. The Family plan will allow up to 6 different devices to stream simultaneously.

I was surprised that they didn't offer a Prime discount for the Family plan. Maybe they'll change their minds and do so once that plan is released.
