I just realized that I was looking in the wrong place and that it IS actually possible to determine the version of the Kindle app in Fire OS 5. In the Settings app go to: Apps & Games -> Manage All Applications -> swipe left multiple times to the "All" tab -> scroll down to "Amazon Kindle". Select this app to show the version number.

For me it is currently 10.15.98_1198617810. (I know from other research that this version came from a component update released in September.)
