If you choose a different version you can get GR to count something more than once. Not particularly useful if you read the same version and really want to keep it accurate but for just a count it should suffice.
The way I have done this is go to a different version of the book (All Editions> Click on title of new version) and then scroll down to "My Review". On the same line that says "My Review" there should be a link to "Review this edition" which lets you put in a new review for the same book. It then shows up in the GoodReads Stats widgets twice, once for each edition.
I can't confirm that the GoodReads yearly challenges work the same way but I would expect them to.
