Your "After the Jailbreak" is a bit vague, I assume you also did the second step (install the 'hotfix' package).
If you failed to do the second step, then the installation of Amazon's customer firmware destroyed your jailbreak.

So just complete whatever parts of steps 7 and 8 which you have not yet done.

Is there any particular reason you have for staying with version 5.6.5 rather than current version?
There is nothing wrong about doing that if that is what you want.
But I can't think of any reason to stay with that version.
