On my 6S: Dislike the new notifications, dislike the new way of opening the device. Absolutely HATE the new Health app, which previously had all its graphs available at a glance. Photos has some changes as well but I have not fully investigated those.
On my iPad Air2: As for 6S minus health. Some websites broke, in that the pages were cut off at about 25% from the right, and not possible to scroll. Other sites also appeared cut off, but were at least scrollable.
There's probably more, but remember these are the things *I* don't like. YMMV. Also remember that downgrading may not be an option later if you wait too long to find out whether you will have things you dislike enough to want to downgrade. Apple will stop signing 9.3.5 soon enough.

Thanks! I'm definitely going to wait. I'm leaning against installing it on my iPhone 6 Plus because I really haven't seen anything that I think is a must have feature or upgrade in iOS 10. I'm definitely not going to install it on my iPad Mini 2 or my backup phone the iPhone 5.
I'm still on the wall as far as macOS Sierra too. It doesn't have much of interest in it for me. I never use Siri even on my iPhone, so I certainly won't use it on my MacBook Pro. And I never use the Apple photo junk. I prefer Lightroom and Photoshop and other professional grade photo processing apps. They almost headed in the right direction a few years back with Aperture, but then they cancelled it and gave us that terrible downgrade to Photos.
