It sounds to me like you'd be better served by adding a custom 'Column built from other columns' rather than editing the content of your series column. Less chance of destroying your series data, allows for existing books to gain series info easier, easier to change if you change your mind, etc, etc.

Attached is a screen shot of my 'Series Title' column that shows the contents of my #title_prefix column (if set), then series (if set) then title.

I expect you'd want something like:

{#genre:|| }{series:|| }{series_index:0>2s|[|] - }
