You can choose the author, using the Tag Browser on the left side (or just searching for it). Same in the case of series. You can also add your own tags to label books.
You don't use metadata plugboards for that - just click on "Edit metadata". Or, even more simply, edit the data in the table view (click on the cell that you want to modify).
