I tend to move between various genre in some unknown cyclical rhythm. When I'm into fantasy, I have no interest in sci/fi or history or biography or general/historical fiction. For me, the choices "at a given time" could not be this varied between genre.
The Moon is a Harsh Mistress, by Robert Heinlein
The Sword of Shannara, by Terry Brooks
Dune, by Frank Herbert
Pillars of the Earth, by Ken Follet
Those four are "Books of All Time" in that if you liked the description enough to pick them up, you'll probably love 'em and consider yourself improved by having read any of them. The kind that "will" come up in conversation and you find yourself nodding about with someone. That's not how it is for everyone, we're all different

but it seems to be for most. They contributed something more than just "great reading".
Cryptonomicon, by Neal Stephenson
Anathem, by Neal Stephenson
Black Company, by Glen Cook
Assassin's Aprendice, by Robin Hobb
These 4 just about are that kind. As enthusiastic as everyone is about Anathem now, they were the same about his Cryptonomicon 10 years ago and Quicksilver 5 years ago.
Little Brother, by Cory Doctorow
The Magic of Recluce, by L.E. Modesitt
1632, by Eric Flint
These I've read, enjoyed and can recommend as well. The ones I haven't listed may be great, I just haven't read them. There is nothing on your list I'd recommend against.
