You're completely misisng the point about science. The search for a GUT is not the search for something which violates Godel's theorem - it is simply (!) an attempt to unify the various models that are currently useful at different scales.
There is no "faith" involved here -all science says is that the current models are those of which we are aware which have the best predictive ability. Nothing more, nothing less.
