Simple, for those without large hands, the only way to read one handed is with buttons.
I have a Sony T3 and I can easily hold it one handed, either left or right, and turn the page. I can't swipe with just one hand. My fingers are not long enough to reach the screen reliably.
And finger prints do show on the matte screen. Not as badly as a glossy screen but they do show.

If I have to use a device without buttons, then I will use a tablet. If must lose the convenience of buttons then I want the convenience of a multifunction device and a colour screen.
