I think you'd like corn-fritters, especially the way The Loved One/Bill Granger makes them. I think Bill has changed the recipe over time, as The Loved One now blends two-thirds of the corn for the batter, and keeps one third as whole kernels. The new KitchenAid helps here, as it blends enough to keep the batter light, otherwise you might want to keep all the kernels who to keep the batter loose and "messy":

I think avocado season goes for most of the year here - there's just a couple of months when they're hard to get at the Farmer's Markets.
