The problem with e-ink is still it's relatively low resolution (as in, the DPI/PPI values) compared to current phone displays.

AMOLED still uses full screen refresh, as it is required for smooth animations. But E-ink is not capable of that fast screen refreshing, or even partial refresh and draw. Hopefully in the next 5-10 years we will see some advance in that field too, to have refresh/draw times on par with a 60Hz display.
