The One has an IPX8 rating -- it can be submerged under 2 meters of water for an hour. The H2O has an IP67 rating -- 2 meters of water for 30 mins. I.e. the One is more waterproofy.
The confusion stems from the fact that they waterproofed the H2O by making it water tight, whereas with the One they chose to make the electronics (mainly the port, I'm guessing) water resistant, so there is no need for a port cover.

Nate's video shows two separate, independent controls for brightness and temp. There's also an Auto toggle to adjust the temp according to ambient light.
If they are really using RGB LEDs, maybe some clever dev can create a hack to adjust the light to any color we want
