You don't have to use any plugins to add non-ebook file types (MP3, MP4, FLAC, AVI etc) to a calibre library either as new books or to existing books. A simple way to add an MP3 as a new book is to drag-drop the file into the Book List. Similarly to add an MP3 to an existing book, drag-drop the file into the Book Details sidebar.

The restriction of only one file of any 'format' applies to non-ebook files. The thread referenced above has some ideas on dealing with multi-episode audio books.

FWIW - I have a 700+GB library that is full of audio and video files, I don't use any audio or video specific plugins to support them.
