The Home page item labeled 'Books' does not open the Kindle app, but is a shortcut to the Books page. There is no Home item that opens the app directly. If you have a book open when you lock the screen, then when you unlock that book should open. I use the Recents page to open books (and have configured Amazon Application Settings/Home Screen Settings to turn off Home Recommendations, Show New Items on Home Page, and Show Apps on the Recent Page.
For the most part I don't like the changes they've made in getting rid of Carousel: seems it is comparatively less efficient to open a book. Not much to be done about it, except to submit feedback and hope their UX people take it seriously.
Immersion reading has issues and I think they have managed to mess up Accessibility (Voice View) as well. And Collections. So in a way home screen navigation is the least of it IMO.
