Of course you can. But how do you plan on signing it with Amazon's signing key?
The whole point of the jailbreak is to get our thirdparty signing key on there, to enable future thirdparty updates packed with KindleTool.

I suppose you could repack the official updates in order to allow easy firmware updates on jailbroken devices... but that problem was already solved via the jailbreak "bridge".
