The serial number is in the image at offset 0x200. You can use a binary editor to see and change it. To get your correct serial number, you can create an image from the card and read that with the binary editor. I've done that but it's a lot of work. If you have a Linux or Mac machine around, you can probably mount the card in that and access the user partition to read the version file. If you are a calibre user and use my Kobo Utilities plugin to backup the database and other files, then you can get the serial number from that. The serial number is actually in the file name created for the backup.
But, overall, I don't know how much it matters. The serial number is used for some things, but it isn't validated once in use. Most of the images have the serial number set to all zeros and I think most people don't fix it. I haven't heard any issues arising from this.
