Are you using Windows? If so right click on a book file and select Properties. Then click Opens With and Change then either select the Calibre viewer if it's listed or click more and browse to the viewer and select it as your default program.
- I'd forgotten (or never realised) Open With is available in Properties, pity there's no Edit With and Print With like there was in the old days. The Edit and Print verbs still work, but their presence is hidden away in the bowels of the Redmond elites (some say, dumbing down is a CIA plot).

@JosephWebber - for the record the viewer is XXX\Calibre2\ebook-viewer.exe, where XXX is the directory in which calibre is installed - normally C:\Program Files or C:\Program Files (X86)
