I'm happy to report that I successfully downgraded too my Kindle Touch (KT2 - serial number 90C6) from 5.7.8.1 to 5.6.0. The whole process took around 15 minutes, I had it plugged to the wall just to be safe. Applied the jailbreak too. Now off to decide what to add to my jailbroken (thanks to everyone here) device!

The guide was super easy to follow. Thanks for all the work you guys put into this!! You rock!!!!!!!!!!!!!!!!!!!
