Ah, but consider the document processors that 'fake' grayscale with a palette (NiLuJe for details - I forget) -
We know the Kindles will barf on those images.

Back in the days when this document was produced from font files -
certain glyphs could have fallen into specific palette slots -
slots that did not survive the translation to black/white (1-bit grayscale).
