For hiding a column from the Edit Metadata dialog, you can use the Job Spy plugin.

You can also use a tweak to control the order of custom columns in Edit Metadata. If you use the "All on 1 tab" layout of Edit Metadata and have quite many custom columns, you won't see those on the bottom unless you scroll down. (That's what I do with rarely used columns).

For the table view, you don't need to put the column at the end and make it narrow - just right-click on the column and choose "Hide column X".

But these are just workarounds; hopefully someone has a better solution.
