Only because it came up in a different thread, my first thought was John Norman's "Gor" series. No zombies, and it's not really post-apocalyptic, but it does involve harsh environments, barbarians, slave girls, etc. I read the first volume, Tarnsman of Gor, in the late 60s(?) and it didn't hold my interest, but it does have a substantial following.
